I was diagnosed with Celiac Disease several years ago and searched for baked goods that were of the same quality as the non-gluten-free baked goods I used to enjoy. I was not satisfied with the gluten-free products that I found in the market, so I began experimenting with my own recipes. I also researched the qualities and characteristics of all of the gluten-free flours used in baking to come up with my own formula. As a result I was able to produce gluten-free baked goods that have the same taste, texture and appearance as the highest quality non-gluten-free desserts.
